Eggless Nankhatai Recipe

Khasta Nankhatai , khasta means in  Brittle / flaky  and Nankhatai meanse cookies , whish is made from Pure ghee and flours. Khasta Nankhatai  sweet  melt in mouth cookies originated  from Surat.

Eggless Nankhatai Recipe is made from Homemade Pure Ghee / clarified butter . Ghee gives very nice aroma & texture to Nankhtai. You can make this cookies savoury too.

Nankhatai is made from different version

  1. semolina- besan-maida (APF) OR
  2. Maida (APF) Only OR
  3. Gluten Free Khasta Nankhatai  from Almond flour- besan -semolina

Today we bake Khasta Nankhatai from 1. Semolina-besan-maida which is usually prepared in Diwali Faral Menu.

Eggless Nankhatai Recipe

Ingredients(Eggless Nankhatai Recipe)

2 Cup All purpose Flour /maida
1  /2 Cup Semolina / Barik Rava/sooji
1/4 Chickpea flour / besan
1 1/2 to 2 Cup Melted Clarified Butter / ghee
1 cup Powdered  sugar (Pitthi sakhar)
1 tsp Cardamom / Elaichi powder
1 tbsp , Almond/ cashew / Pistachios (Garnishing)

Method:(Eggless Nankhatai Recipe)

Take sugar and grind in mixer to make fine powder.

In big bowl sieve maida, Besan and abovePowdered Sugar  2 times.

Now add semolina.

Heat ghee till its Melt, it take few seconds.

Gently rub the melted clarified butter/ ghee into the flour using your finger tips… till it resembles fine crumbles. (This step help to make nankhatai khasta/melt in mouth)

Now bring the dough together by pressing little balls of dough together. Do not over work the dough.

Wrap in plastic wrap and refrigerate for 20 minutes

Grind cardamom into fine powder and chopped nuts , keep aside

preheate oven at 180.c for 10 min

Grease aluminum baking tray with oil / Parchment paper.

Once the dough has rested  Unwrap and break small balls of the cool dough. Make small flat balls keep on greased baking tray.

Once you shape the Eggless  Nankhatais , place them on cookie sheet

Using a knife, cut a cross in the middle of each Eggless Nankhatai Recipe.

Gently press some elaichi powder and nuts in the middle.

Now rest the baking sheet in refrigerator 10 – 15 min.

After 15 minutes take out of fridge and Bake Eggless Nankhatai Recipe in preheated oven at 170.c oven for about 15-18 minutes.

Eggless Nankhatai Recipe is ready .

Cool on a wire rack and then store in an airtight container.


Do not use non stick baking tray which is  as it results in burning/over browning of the Eggless Nankhatai Recipe.

Keep cookies in distance while baking , as they expand and spread out while baking.

Keep eyes on oven while baking cookies.

You can use melted butter instead of ghee .
