How to cook Sambar

Onam Sadhya Sambar / Varutharacha Nadan Sambar.

Sambar, it implies a combination of different veggie &  Lentils. Its tasty , tangy & aromatic Sambar is going perfect with steamed Rice , idli, vada etc Sambar is staple in  every South Indian homes. we make at least twice  in  a week. Also Sambar is Main Dish in Kerala Onam Sadhya.

In sambar  various vegetable are added. Either you can make sambar with mix veggies or use only one vegetable.  We always prefer   sambar is single or two vegetables. ( lady finger/ onion / tomatoes ) simple , plain Sambar going best with daily Meal.
   There is varieties of  sambar . Onion (Ulli) sambar , drumstick sambar  , ladies finger sambar. Raw mango (manga) also using in  sambar in the place of Tamarind.

How to cook Sambar

Mixed Vegetables – 2  cups, chopped

split pigeon peas(Toor Dal) – 3/4 cup
Red Lentis (Masoor Dal) 1/4 Cup
Tomatoes (thakkali) – 2 chopped
Onions (ulli) – 2 slice
Tamarind Extract (Pulli) – 1/2 cup
Coconut – 1  grated
Coconut Oil – 2 tbsp
Coriander powder (Mallipodi) – 1 tsp
Bengal Gram Dal (kadla parippu) – 1 tblsp
Split Black Gram (Urad Parrippu) – 1tbsp
Fenugreek Seeds (uluva) – 1tsp
Dry Red Chillies –2 / 3
 Mustard Seeds – 2 tsp
Curry Leaves – handful
Coriander Leaves – handful (optional)
Homemade Samar Powder – 2tbsp
Asafoetida (kayam)– little
Turmeric Powder (Manjal Podi) – a pinch

Salt as per taste


1)  Cut the vegetables. & Grate fresh coconut.


2) Soake Bothe lentils in watar 20 min , this step cook your dal quick & with the extra smooth.


3)Soake the tamarind and put it in 1/2  cup of water ,keep it aside for 5 minutes and then  squeeze the tamarind and take the water.
 3) Put the dal and onion , tomatoes, salt  & turmeric in the pressure cooker            with adequate water to cook.  


4) After  3 whistle . 

5) Meanwhile in a frying pan add coconut oil and roast freshly grated coconut along with some shallots, bengal gram, urad dal.
6) curry leaves,coriander powder,red chilly powder and some asafoetida.

6) Dry roast the above ingredients and   After cooling down grind this roasted coconut mixture in to a fine paste by adding enough water.


 7) On the same pan saute ladies finger in 1/2 tsp coconut oil.

8) Now add this ladies finger in cooked dal and simmer 3 or 4 min.
9) Add Sambar Powder in little water and make paste.


10) Heat a small soil pot / cheenchatti / pan and add coconut oil splutter mustard seeds,fenugreek seeds, Asafoetida (Kayam)curry leaves,dried red chilly  and above sambar powder paste and saute 1 minutes.
11) Now pour this tempering into the sambar and mix properly.
12) Add roasted coconut grind paste  in to the boiling curry and cook for 2 minutes.
     cover and let it sit for few minutes.

13 ) Mix the Sambar well before serving.Serve With Stemaed Vada Rice,Idli or Dosa…
