Malabar Chicken Biryani Recipe
If there is such a thing as foods of the God, it is the biryani. Malabar Chiken Biryani recipe is very popular dish in south india .

Ingredient (Malabar Chicken Biryani Recipe)
Basmathi rice – 1 kg
Water (For rice) – 1 litre
cinnamon 2 inch
cloves, 8 to 9
cardamon 6 to 7
peppercorn 10 to 12
for chicken
Chicken – 1 (nicely wash and drain )
cinnamon 2 nch
Eastern Biryani Masala
Green chilly – 10
red chilli powder 1/2 tbsp
turmeric 11/2 tsp
Ginger garlic paste – 2 tbsp ( keep 1 tbsp for curry)
Curd – 150 ml
Tomato – 150 g
Onion – 1 kg ( keep 2 big onion for garnishing )
Black cumin seeds – 1 tsp
Cinnamon stick – 2 pieces
Bay leaves – 2
Cashew nuts kismis – 30 g
Cardamom – 5
coconut oil / Ghee – 150 g
Coriander powder – 2 tbsp
Granishing
tutti frutti Garnishing 1 tbsp
pineapple chunks 1 tbsp
cherries 1 tbsp
Ghee – 10 g
Coriander leaves – 50 g
Mint leaves – 25 g
Cashew nuts kismis – 29 g
onion – 2 Big
Milk – 500 ml
Saffron – 1 pinch
Method of preparation
1 step
soked some cashew in 1/2 cup of water to make puree .
wash chicken in 3 to 4 times water
take cloth and pat dry chiken . (चिकन कोरड्या कापडाने पुसून घेणे)
Into the pan, mix ginger garlic paste , curd and biryani masala and turmeric powder, and coriander powder. Add the chicken pieces Marinate this chicken 4 to 5 hours (or overnight)
2 step
Garnishing
Heat the ghee in a thick bottom pan (kadhai);
add the raisin fry (careful will burn )
add the onions and saute till golden brown colour.
Now add cashew in the same saucepan
3 step
For chicken frying
take heavy bottomed pan to fry chicken
add coconut oil and wait to hot a oil
then add marinated chicken and deep fry in a oil
keep aside
4 step
For chicken curry
Take a pan add Coconut oil
- add some cinnamon , cardamon, peppercorn, cloves in oil and saute 2 sec
- then add onion
- saute onion nicely pinkish in colour
- then add re Chilli powder, Turmeric , Coriander Powder & Eastern Biryani Masala
- Fry nicely in sauteed onion
- Now add the sliced tomatoes and saute well.
- then add Fried chicken. and fry in sauteed onion-tomatoes
- 5 min continuous mix then add 1/2 cup hot water.
- after cooking chicken add soaked cashew puree in in and mix
- again cooked minmin
- garnish some coriander leaves , onion fry Ready.
5 step
Rice
- Soak the rice for about 10 minutes and drain well.
- Take pan add l water in it
- wait till water boil
- add cinnamon , cardamon, peppercorn, cloves
- add ghee.
- half cooked the rice (keep a eyes on rice do not not full cook)
- and drain.
Final Step
Dum Biryani (we dumed rice in ghee,nuts & saffron milk if u want to add chiken in it u can)
Take a pan
apply ghee on all over the pan
place half the rice into it.
Now put the cooked chicken on the top of the rice.
sprinkle nuts , fry onions, tutti fruit, cherries, pineapple chunks, coriander leaves, mint leaves.
Add the remaining rice on top of the garnishing layer.
Make random holes through the rice with a spoon and pour into each a little saffron milk. Place a few spoons of ghee, fried onion, cashew nuts and kismis on the surface and cover tightly with folic paper or maida dough. The delicious Malabar biriyani is ready to be served.
Cook or Dum for twenty minutes over a slow fire.
