When one thinks of Mumbai and its street food, what comes to mind are the vada pav or  Batata vadas have been a staple of the Maharashtrian household. However, medu vadas can also claim to be a part of the Mumbai’s street food list today. road side, food galli or on cycle people gathered around these medu vada cycle seem to make a line for the medu vadas.

Ingredients ( Medu Vada Recipe)

Urad dal/uzhunnu/ blak gram lentil – 1 cup
Chana dal / toor dal- 1 tsp
Small onion – 1
Green chillies – 1
Ginger – 1/2 inch piece
Coriander leaves – 2 tbsp, finely chopped. (optional)
Curry leaves – A sprig
Salt – As needed
Ice cold Water – As needed 

 

Method
 
1) First of all Clean , wash and Soak Urad dal & 2 tsp chana dal for 2 -3 hours and Drain. now keep urad dal in freeze for 30 min.

2) Now grind green chilli, ginger, urad dal without water first, then add ice cold water little by little, add chopped onion and grind. Now remove from mixi jar and   whisk batter by hand 10-12 min then you will get nice fluffy white batter pic shown in bellow. (don’t grind for too long)

3) After Grinding  add salt. chop onions,ginger,green chillies,coriander leaves and finelly chopped curry leaves i skip it . (my daughters love plain mendu vada with tomato ketchup for tiffin)

4)Heat a kadhai add sunflower or any oil.

5) Now wet your hand well.


6) Make a small ball.

7) Use your thumb finger to make hole in the middle.

8) Drop it in hot oil.

 9) Fry in medium flame,turn the medu vada and fry till both the sides  crisp and golden .

10) Mendu Vada is ready to serve with sambar and coconut chutney.
