Soft Buns Recipe
 Soft Buns / Ladi Pav Recipe is a pillow soft homemade bun, which is very famous in Aamchi Mumbai. This feather-soft bun is made with flour, butter & yeast . This Soft Buns / Ladi Pav Recipe   had with a chicken curry , spicy bhaji or any vegetable curry. Here is step by step Pictorial (Photo) to make Homemade Soft Buns / Ladi Pav Recipe .

Ingredients(Soft Buns / Ladi Pav Recipe)

  • Milk – 100ml
  • Yeast – 2 Tsp
  • Sugar – ½ Tbsp
  • Maida / All purpose Flour – 125g / 1 Cup
  • Salt – ½ Tsp
  • Milk Powder – 1 Tbsp / 9gms
  • Butter – 10 gms / 2 tsps
  • Milk & Butter – For Brushing
  • Salt – 2 Cups for Baking
  • Water- 4tbsp

Method

To the 4 tbsp warm water, add the sugar and the yeast. Stir and keep aside to proof for 10 mins.

Sieve All purpose flour

place the flour, salt and the milk powder & butter. Mix and make a well in center.


In that well place the Activated yeast .
Place the butter  also in the  well. 

Get your hands in and form this into a soft dough. If the mixture does not turn out to be soft consistency, add more milk to it and make it sticky and soft.

Kneading dough on the table top counter.

Knead very well  with stretching and pulling Method. 
Use the scraper to gather the sticky dough and knead again and again. 

Knead for about 12-15 mins till the dough becomes very smooth and soft but still quite sticky.


Place this into a bowl with a lil bit of oil, coat the dough and the bowl with the oil, cover with a damp cloth and let it proof for 1 hour or till double in size.

Punch the dough down to take out the air completely with the help of little flour. 


Knead for another 2 mins. 
Now  divide the dough into 6 equal portion .

Smoothen out each portion by rolling them between your palm & fingers. and make round shape Place the shaped portions in a 6 square cake tin without gap.

Cover the tin with a wet cloth and let the pavs / buns  proof for another hour or until well risen.

Now pavs are well risen .

Dip tissue paper on milk and apply one risen pavs top, or Use Brush

Now carefully place the tray in the pre heated oven at 220c  for 10-15 mins, until they are nicely browned on top and well risen.

Take them out and turn them over from the tray and brush them with melted butter Immediately.

Your Soft Buns / Ladi Pav Recipe is ready to be served.


Tips

DO NOT ADD ADDITIONAL FLOUR  while kneading.

You can use oil  instead of butter.

You can add 1/2 cup wheat flour to make healthy pavs.
