Sambar Powder Recipe

Homemade Sambar Powder Recipe is key ingredient in  the  taste of south indian Sambhar Recipe.  Dosas, medu vada, idlis, which is  taste perfect with Sambhar .

Homemade sambhar Powder Recipe

Ingredients

  • 1 tsp  oil
  • 30 Byadgi chilies / Dry red chilies
  • 2 teaspoon methi /uluva/fenugreek seeds
  • 1/4 cup chana dal / kadala parippu (split chickpeas lentil)
  • 1/4 cup urad dal (split black lentils, skinned)
  • 1/2 cup coriander seeds /Mallipodi(dhania)
  • 1/2 tsp Turmeric pow / Manjal podi/
  • 1/4 cup mustard seeds (kaddagu/rai)
  • 1 teaspoon  black peppercorns/ kali mirch
  • 2 tbsp cumin seeds / jeerakam(jeera)
  • 1 tsp Asafoetida/ Kayam / Hing/
  • 20-25 kadipatta /Veppla/(curry leaves)

Method

Clean dals and cumin, coriander.

Clean red chili with dry clean towel keep aside

In a pan/kadhai  kept over medium-low heat, add oil and once it heats up, add byadgi chilies and fry them till they are aromatic . keep aside.

Now in same pan Add methi seeds, fry them for 10 sec

adding channa dal, urad dal, coriander seeds, mustard seeds and peppercorns.

Fry all lentils & spices separately  till they turn aromatic.

Atlast  add cumin seeds and curry leaves. Fry them for another 10-15 sec and turn off the gas.

Let it cool down for 15-20 minutes before grinding them to a fine powder along with the chilies.

If the mixture is warm after being ground, transfer it to a plate and once it cools down, transfer the powder into an air-tight container and store it in a cool -dry place.

Make fine paste with few drop water before adding to  Tiffin / Idli sambar Palakkad sambar

NOTES

You can roast spice without oil.

Keep eyes while roasting chiles it will burn faster.
