Carrot Halwa is  The most popular and beloved dish made with Nuts & carrots is the carrot halwa. In maharashtra we make variety of veggies halwa like carrot halwa, beat root halwa, Dodhi (bottle gourd ) halwa and so on.. /Carrot Halwa recipe is one of the first  sweet I cooked when i was in 8 th std. It is my Baba (Grandpa) favourite. It is my husband favourite too.  I always think it is one of the most healthier Sweet.  I skip milk and use less sugar in this Recipe

This without milk Carrot Halwa for DietYou can add 1/4 cup of  Khoya and  2 cup milk to make more Delicious. Pleasant words are a honeycomb, Sweet to the soul and healing to the bones.(Proverbs 16:24)
Ingredients:(carrot  Halwa Recipe)
 
Carrot – 4 Cups
 
Condensed Milk – 2-4 tablespoon ( I have used 2 spoon of low fat )
 
Mixed nuts – 2-3 tablespoons
 
Cardamom powder – a pinch
 
Ghee (Clarified butter) – 2 tbsp

Method
 
Peel and wash the carrots. Grate them .
Medium heat ghee in a pan or kadai.
Heat a  kadai add 1 tbsp of Pure ghee (clarified butter)  add  crushed Cashew & crushed almond in it & fry till golden in color. keep aside
Fry carrot  in same pan with ghee for a 3 or 4 minutes. 

Add milk, cook carrot on low-medium heat till its semi cook  .
Add sugar and , stir well. After some time sugar will melt.
Add crushed  cashew / almond nuts 
Cook this  with Lid in low  flame till its semi dry or dry. Stir occasionally.
Add cardamom powder and  2 tbsp Condensed milk mix well. And switch off the flame.
Garnish with some nuts on the top . Carrot halwa is ready without milk.
 Serve hot or after cooling with or without ice cream.
Tips
  • Condensed Milk is fully Optional. it is just for touch.
