Veg Mayonnaise Salad

Veg Mayonnaise Salad is the delicious and healthy salad  which is combination of various tasty veggi are mixed and flavored with the mayo & Mustard .  Lots of variety veggi crunch and creamy mayoo make this Salad more delicious. You can serve  salad with whole wheat breads .You can use this salad as stuffing in  Zingy Parcel and  in sandwiches.

Ingredients

2  Carrots
2  Potatoes
1 Kohlrabi / parsnip / Gaanth gobhi/ Nookkal
2 Apples, peeled
1/2  Pomegranate ( Optional)
4 Pickle Cucumber
5 hard-boiled eggs (Vegans: Paneer)
1 can green chickpeas / Kadla
lemon juice
1 small jar Homemade mayonnaise
1 tsp
 mustard Sauce
 
Method

Bring a saucepan of water to the boil. 

Cook the carrot, potato and kohlrabi until cook. 

Remove and drain. keep aside to cool.
  

When cool, peel and chop into small cubes/ chunnks.
  

Transfer to a serving bowl.

Cut the apple, gherkin and egg into small cubes. 

Add to the vegetables. Add the cooked  chickpeas and lemon juice. 

Season with salt and pepper.

Combine the mayonnaise and mustard Sauce in a small bowl mix well.

Add to the salad and mix well.

Enjoy this healthy & crunchy Mayo salad  with wheat breads, zingy parcel,   sandwich, breads or nachos.
Tips

You can use any salad veggies  like Fresh cucumber, beetroot, tomato, capsicum.

Vegetarian can also enjoy this salad just skip eggs and add Paneer Cubes.

Can use Store brought Mayonnaise. But Fresh Homemade Mayo best for this salad.
